Common Name: Kokum, Botanical Name: Garcinia indica. Kokum is a tropical evergreen tree. It reaches heights of 15m (50 ft). The dark purple fruit is round, about 4 cm in diameter with 5 – 8 seeds. The outer cover of fruit is dried in the sun to get aamsul or kokam. It is used as a slightly sour spice in recipes from Maharashtra. Kokum yields a peculiar flavour and blackish red colour. Kokum squash or kokum concentrate is used in preparing a drink (sherbet) which is bright red in colour and improves digestion and cools the body during summers.
